8 oz whole grain pasta (spaghetti or penne)

2 cups fresh broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Zest of 1 lemon

Juice of 1 lemon

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Fresh basil leaves for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Blanch the Broccoli: In the same pot, add the broccoli florets to the boiling water for about 2-3 minutes until bright green and tender. Quickly drain and rinse with cold water to stop the cooking process. Set aside.

      Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, until fragrant but not browned.

        Combine: Add the blanched broccoli to the skillet, followed by the drained pasta. Toss to combine, and add a bit of the reserved pasta water as needed to create a light sauce.

          Season: Stir in the lemon zest and juice, and season with salt and pepper to taste. If desired, mix in the grated Parmesan cheese or nutritional yeast for a cheesy flavor.
