For the Chicken Skewers:

1 pound boneless, skinless chicken thighs, cut into 1-inch pieces

2 tablespoons soy sauce

2 tablespoons fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon ground coriander

1 teaspoon ground turmeric

1 teaspoon red pepper flakes (adjust to taste)

10-12 bamboo skewers (soaked in water for 30 minutes)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 clove garlic, minced

1/2 teaspoon chili garlic sauce (adjust for spice)

Chopped peanuts and fresh cilantro for garnish

Instructions
 

Marinate the Chicken: In a mixing bowl, combine soy sauce, fish sauce, brown sugar, lime juice, minced garlic, ground coriander, ground turmeric, and red pepper flakes. Mix well. Add the chicken pieces and stir to coat them evenly. Cover and refrigerate for at least 30 minutes, preferably 2-3 hours for maximum flavor.

    Prepare the Peanut Sauce: In a separate bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, honey (or maple syrup), minced garlic, and chili garlic sauce until smooth. Adjust seasoning to your taste. If the sauce is too thick, add a little more coconut milk or water to reach your desired consistency.

      Preheat the Grill: Heat your grill to medium-high heat and lightly oil the grill grates to prevent sticking.

        Assemble the Skewers: Thread the marinated chicken pieces onto the soaked bamboo skewers. Leave a little space between each piece for even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 5-7 minutes on one side, then flip and grill for another 5-7 minutes, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Drizzle or serve the peanut sauce alongside the skewers for dipping. Garnish with chopped peanuts and fresh cilantro for an added crunch and freshness.
