8 ounces linguine pasta

2 tablespoons unsalted butter

2 tablespoons olive oil

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

Salt and pepper, to taste

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (optional for heat)

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup chicken broth

1/4 cup heavy cream

1/4 cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Chicken: In a large skillet, heat the butter and olive oil over medium-high heat. Season the chicken pieces with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper (if using).

      Sauté the Chicken: Add the seasoned chicken to the skillet and cook for about 7-10 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove from the skillet and set aside.

        Make the Cowboy Butter Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
