2 boneless, skinless chicken breasts

1/2 cup chipotle ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked white rice

1 cup black beans, drained and rinsed

1 cup corn (fresh or frozen)

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or a Mexican blend)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts with chipotle ranch dressing, olive oil, garlic powder, onion powder, paprika, salt, and pepper. Cover and marinate for at least 30 minutes (or up to 2 hours in the refrigerator) to enhance the flavor.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and dispose of any excess. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the juices run clear. Let the chicken rest for a few minutes, then slice it into strips.
