Easy Chipotle Ranch Grilled Chicken Burrito

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup chipotle ranch dressing

4 large flour tortillas

1 cup cooked rice (white or brown)

1 can black beans, drained and rinsed

1 cup shredded cheddar cheese

1 cup corn (fresh, canned, or frozen)

1 cup shredded lettuce

1 large tomato, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Start by marinating the chicken. In a bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.

    Preheat the grill to medium-high heat. Once hot, add the marinated chicken breasts and grill for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Use a meat thermometer to ensure they reach an internal temperature of 165°F (75°C).

      Remove the chicken from the grill and let it rest for a few minutes. Then, slice the grilled chicken into thin strips.

        In a large bowl, combine the cooked rice, black beans, corn, diced tomato, and half of the chipotle ranch dressing. Mix until well combined.

          Warm the flour tortillas in a dry pan or microwave for a few seconds to make them pliable.

            To assemble each burrito, place a tortilla on a flat surface. Layer with a scoop of the rice and bean mixture, followed by a generous portion of sliced grilled chicken. Top with shredded lettuce, cheese, a drizzle of the remaining chipotle ranch dressing, and a sprinkle of fresh cilantro.

              Fold in the sides of the tortilla and roll it up tightly from the bottom. Repeat with the remaining tortillas and filling ingredients.

                Optionally, you can grill the assembled burritos on the grill or in a pan for 2-3 minutes to create a crispy exterior.
