2 large cucumbers, thinly sliced

1 teaspoon salt

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon freshly grated ginger

2 cloves garlic, minced

1 tablespoon sesame seeds

2 green onions, finely sliced

Red pepper flakes (optional, for spice)

Fresh cilantro or mint leaves for garnish

Instructions
 

In a mixing bowl, sprinkle the sliced cucumbers with salt and toss well. Let them sit for about 10 minutes to draw out excess moisture.

    While the cucumbers are resting, prepare the dressing. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and red pepper flakes if you like heat.

      After 10 minutes, drain any excess water from the cucumbers and gently pat them dry with a clean kitchen towel.

        Combine the cucumbers and dressing in a large bowl, tossing until the cucumbers are evenly coated.

          Sprinkle sesame seeds and sliced green onions on top, tossing gently once more.

            Garnish with fresh cilantro or mint leaves before serving.
