3 medium cucumbers, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 teaspoon grated fresh ginger

1 clove garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 cup chopped scallions

2 tablespoons sesame seeds, toasted

Fresh cilantro for garnish

Instructions
 

Start by slicing the cucumbers thinly and placing them in a large mixing bowl. If you prefer, you can lightly salt the cucumbers and let them sit for about 10 minutes to draw out excess water, then drain the liquid.

    In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, minced garlic, and red pepper flakes until the sugar dissolves and the mixture is well combined.

      Pour the dressing over the sliced cucumbers and toss gently to coat all the cucumber slices evenly.
