Ingredients

For the crust:

3 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter (cold, diced)

1/4 cup vegetable shortening (cold)

1/4 cup ice-cold water (more if needed)

2 teaspoons curry powder (for flavor)

For the beef filling:

1 pound ground beef

1 medium onion (finely chopped)

2 cloves garlic (minced)

1 tablespoon fresh thyme (or 1 teaspoon dried thyme)

1 teaspoon allspice (ground)

1 teaspoon black pepper

1 teaspoon salt (or to taste)

1 teaspoon Scotch bonnet pepper (finely chopped, optional for heat)

1/4 cup beef broth

1/4 cup breadcrumbs (for texture)

1 tablespoon soy sauce

Instructions

Make the Crust:

    - In a large mixing bowl, combine the flour, baking powder, salt, and curry powder. Mix well.

      - Add the cold diced butter and shortening to the bowl. Using a pastry cutter or your fingers, blend until the mixture resembles coarse crumbs.

        - Slowly add the ice-cold water, one tablespoon at a time, mixing until the dough comes together. Do not overwork.

          - Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

            Prepare the Filling:

              - In a skillet over medium heat, add a splash of oil and sauté the chopped onions until softened (about 5 minutes). Add the minced garlic and cook for another minute.

                - Add the ground beef to the pan, breaking it up with a spoon. Cook until browned.

                  - Stir in the thyme, allspice, black pepper, salt, and Scotch bonnet pepper (if using). Cook for another minute.

                    - Pour in the beef broth and add breadcrumbs. Cook for an additional 3-4 minutes until the mixture is thickened. Remove from heat and let it cool.

                      Assemble the Patties:

                        - Preheat your oven to 375°F (190°C).

                          - On a floured surface, roll out the dough to about 1/8 inch thick. Use a round cutter (about 5 inches in diameter) to cut out circles.

                            - Place a spoonful of the beef filling in the center of each dough circle. Fold the dough over to form a half-moon shape and seal the edges by pressing with a fork or crimping with your fingers.

                              - Place the filled patties on a baking sheet lined with parchment paper.

                                Bake:

                                  - Brush each patty with an egg wash (1 beaten egg mixed with 1 tablespoon of water) to get a golden color.

                                    - Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

                                      Serve:

                                        - Allow the patties to cool slightly before serving. Enjoy them warm as a snack, appetizer, or a delicious meal!
