1 lb ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, finely chopped (any color)

1 small celery stalk, diced

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup tomato sauce

2 tablespoons Worcestershire sauce

1 tablespoon brown sugar

1 tablespoon Dijon mustard

4 hamburger buns

Optional toppings: sliced jalapeños, coleslaw, chopped green onions, or pickles

Cook the Chicken: In a large skillet over medium heat, heat the olive oil. Add the ground chicken to the pan and cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes.

    Sauté the Vegetables: Add the chopped onion, bell pepper, and celery to the pan. Sauté for another 5 minutes or until the vegetables are softened. Stir in the minced garlic and cook for another 30 seconds, until fragrant.

      Season the Mixture: Sprinkle the Cajun seasoning, smoked paprika, salt, and black pepper over the mixture. Stir to combine and toast the spices slightly for about 1 minute.

        Add the Sauces: Pour in the tomato sauce, Worcestershire sauce, brown sugar, and Dijon mustard. Stir everything together until fully combined.

          Simmer: Reduce the heat to low and let the mixture simmer for 10-15 minutes, allowing the flavors to meld together. Stir occasionally, adding a splash of water if the mixture becomes too thick.

            Serve: Toast the hamburger buns if desired. Spoon the Cajun chicken mixture onto the bottom half of each bun. Top with your choice of jalapeños, coleslaw, green onions, or pickles. Place the top half of the bun on each and serve hot.
