Ingredients

2 large cucumbers, thinly sliced

1/2 cup red onion, thinly sliced

1/2 cup fresh dill, chopped

1/2 cup Greek yogurt

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 teaspoon honey

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

A few cherry tomatoes, halved (for garnish)

Instructions

In a large bowl, combine the sliced cucumbers, red onion, and chopped dill.

In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, olive oil, and honey until smooth.

Pour the dressing over the cucumber mixture and toss gently to combine, ensuring everything is well coated.

Season the salad with salt and pepper to taste. If using, fold in the crumbled feta cheese for added creaminess and flavor.

Allow the salad to rest in the refrigerator for about 15-20 minutes before serving to let the flavors meld.

Just before serving, garnish with halved cherry tomatoes for a pop of color.
