Ingredients

4 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup crumbled feta cheese

1/4 cup hot honey (or mix honey with a bit of chili flakes to taste)

Olive oil (for frying)

Fresh parsley (for garnish)

Instructions

Prepare the Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels to ensure crispiness. If they are thick, consider butterflying them for even cooking.

Set Up Breading Station: In three separate shallow dishes, place the flour in the first, whisk the eggs in the second, and combine breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in the third.

Bread the Chicken: Dredge each chicken breast in flour, tapping off the excess. Dip it into the egg mixture, allowing excess to drip off, and then coat it with the seasoned breadcrumb mixture, pressing lightly to adhere.

Fry the Chicken: Heat a generous amount of olive oil in a large skillet over medium heat. Once hot, carefully add the breaded chicken breasts. Fry for about 5-7 minutes on each side until golden brown and cooked through. Internal temperature should reach 165°F (75°C). Remove and set aside on a paper towel-lined plate to drain excess oil.

Finishing Touches: On a baking sheet, place the crispy chicken and sprinkle the crumbled feta cheese over the top. Drizzle with hot honey. Bake in the preheated oven for 5-10 minutes, just until the feta is slightly melted and warmed through.

Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately with additional hot honey drizzled over the top, if desired.
