1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

1/2 cup cold water

1/4 cup vegetable oil (for frying)

For the Honey Garlic Sauce:

1/2 cup honey

4 cloves garlic, minced

1/4 cup soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp ginger, grated

1/2 tsp red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a large bowl, combine the flour, cornstarch, baking powder, garlic powder, salt, and black pepper. Mix well. Gradually add cold water to the dry mixture until you have a smooth, thick batter.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Coat the Chicken: Dip the chicken pieces into the batter, ensuring they are well-coated. Shake off any excess batter.

        Fry the Chicken: Carefully place the battered chicken pieces into the hot oil. Fry in batches to avoid overcrowding the pan, cooking for about 5-6 minutes per batch or until they are golden brown and crispy. Remove the chicken and place it on a paper towel-lined plate to absorb excess oil.
