Ingredients

1 pound salmon fillet, skin removed and cut into 1-inch cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 teaspoons Sriracha (adjust for spice level)

1 teaspoon lime juice

1 teaspoon honey (optional, for added sweetness)

Instructions

Prepare the Salmon:

    - Place the salmon cubes in a bowl and season with salt, pepper, garlic powder, and paprika. Toss gently to ensure they are evenly coated.

      Set Up Breading Station:

        - In one shallow dish, place the flour. In a second shallow dish, add the beaten eggs. In a third dish, add the panko breadcrumbs.

          Bread the Salmon:

            - Dredge each salmon cube first in the flour, shaking off the excess. Next, dip it into the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere. Repeat until all salmon cubes are coated.

              Prepare the Bang Bang Sauce:

                - In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey (if using). Whisk until smooth and well combined. Set aside.

                  Fry the Salmon Bites:

                    - In a large frying pan, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully add the breaded salmon cubes in batches, being careful not to overcrowd the pan.

                      - Fry for about 2-3 minutes per side or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

                        Serve:

                          - Arrange the crispy salmon bites on a serving platter. Drizzle with Bang Bang sauce or serve it on the side for dipping. Garnish with fresh parsley or green onions if desired.
