1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

4 cups vegetable or chicken broth

1 (14.5 oz) can diced tomatoes

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

12 ounces fresh or frozen cheese ravioli

1 cup heavy cream

2 cups fresh spinach

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish

Instructions
 

Sauté the Vegetables: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook for 2-3 minutes until softened. Then, stir in the minced garlic, diced carrots, and diced celery. Sauté for another 5-7 minutes until the vegetables are tender.

    Add Broth and Tomatoes: Pour in the vegetable or chicken broth and the can of diced tomatoes (with juices). Add the dried basil, dried oregano, and red pepper flakes. Stir to combine and bring the mixture to a gentle simmer.

      Cook the Ravioli: Once simmering, add the ravioli to the pot and cook according to package instructions (usually around 4-6 minutes for fresh ravioli; check for doneness). Stir occasionally to ensure they don’t stick to the bottom.

        Incorporate Cream and Spinach: After the ravioli has cooked, reduce the heat to low and stir in the heavy cream. Allow the soup to heat through for a couple of minutes, and then add the fresh spinach. Stir until the spinach is wilted.
