Creamy Mushroom and Asparagus Chicken Penne

8 oz penne pasta

2 cups fresh asparagus, trimmed and cut into 1-inch pieces

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 cups mushrooms, sliced (cremini or button mushrooms)

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook the Asparagus and Mushrooms: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the asparagus pieces and sauté for 2-3 minutes until they start to become tender. Then, add the sliced mushrooms and minced garlic, cooking for an additional 4-5 minutes until the mushrooms are golden brown and the asparagus is tender-crisp.

        Create the Creamy Sauce: Pour in the chicken broth and bring the mixture to a simmer. Reduce heat to medium-low and stir in the heavy cream. Allow it to simmer for a few minutes until the sauce thickens slightly.
