Creamy Garlic Shrimp Pasta

8 ounces fettuccine or spaghetti

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

2 cups fresh spinach

1 tablespoon fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, melt 2 tablespoons of butter. Add the shrimp, season with salt, pepper, and red pepper flakes if using. Cook for about 2-3 minutes on each side, or until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Sauté for about 1 minute, until fragrant. Be careful not to burn the garlic.

        Add Cream and Cheese: Pour in the heavy cream, stirring continuously. Gradually add the Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

          Combine Everything: Add the cooked pasta, shrimp, fresh spinach, lemon zest, and lemon juice to the skillet. Toss everything together until well coated in the creamy sauce. Cook for an additional 2-3 minutes until heated through and the spinach wilts.

            Serve: Plate the pasta and shrimp, garnishing with chopped parsley for a pop of color. Enjoy immediately!
