Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce

1 lb (450g) rotini pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 tbsp Italian seasoning

Salt and pepper, to taste

2 tbsp unsalted butter

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt, pepper, and Italian seasoning. Cook for 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds, or until fragrant.

        Create the Creamy Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir well. Allow to reduce for about 3-5 minutes, stirring occasionally.

          Add the Cheese: Lower the heat and stir in the grated Parmesan cheese until fully melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water until desired consistency is achieved.

            Combine: Return the cooked chicken to the skillet and mix well with the sauce. Add the cooked rotini pasta to the skillet and toss to combine everything evenly.

              Garnish and Serve: Remove from heat and garnish with freshly chopped parsley. Serve warm with an extra sprinkle of Parmesan cheese on top if desired.
