1 lb (450g) rotini pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and black pepper, to taste

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp unsalted butter

1 tsp Italian seasoning (or a mix of oregano, basil, and thyme)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook rotini according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the pan and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

        Add Liquid Ingredients: Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Let it simmer for 2-3 minutes. Then, reduce the heat further and add the heavy cream and butter, stirring until the butter has melted.
