Ingredients
  

1 lb chicken sausage, sliced

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup spinach, fresh or frozen

1 small onion, diced

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil for garnish (optional)

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook the Aromatics: In the same skillet, add the diced onion. Sauté for about 3-4 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

      Add Orzo and Broth: Stir in the orzo pasta and mix well with the onions and garlic. Pour in the chicken broth, bringing the mixture to a simmer. Cook for about 10 minutes, stirring occasionally, until the orzo is al dente.

        Stir in Cream and Vegetables: Once the orzo has absorbed some of the broth, reduce the heat to low. Add the heavy cream, spinach, and halved cherry tomatoes. Stir until the spinach is wilted and everything is well combined.

          Combine and Season: Return the browned chicken sausage to the skillet. Season with Italian seasoning, salt, and pepper to taste. Continue to cook for another 2-3 minutes until heated through.
