1 pound chicken sausage, sliced (your choice of spicy or mild)

1 cup orzo pasta

4 cups chicken broth

1 cup heavy cream

1 medium onion, diced

3 cloves garlic, minced

1 cup baby spinach, chopped

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil, for garnish

Grated Parmesan cheese, for serving

Sauté the Sausage: In a large skillet or pan, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 4-5 minutes. Remove the sausage from the pan and set aside.

    Cook the Aromatics: In the same pan, add the diced onion and sauté until translucent, around 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add the Orzo: Pour in the orzo pasta and stir to coat with the oil and onions, cooking for 1-2 minutes to toast the pasta slightly.

        Combine Ingredients: Add the chicken broth and Italian seasoning to the pan, stirring well. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 10-12 minutes, or until the orzo is tender and most of the liquid is absorbed.

          Create the Creamy Sauce: Stir in the heavy cream and return the cooked chicken sausage to the pan. Mix in the chopped spinach and cherry tomatoes. Cook for another 3-4 minutes, allowing the spinach to wilt and the sauce to thicken slightly. Season with salt and pepper to taste.
