Ingredients

8 ounces fettuccine pasta

1 lb boneless, skinless chicken breasts, cut into strips

2 tablespoons Cajun seasoning

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

Season the Chicken: In a mixing bowl, combine the chicken strips with Cajun seasoning, salt, and pepper. Ensure the chicken is evenly coated.

Sauté Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

Prepare the Veggies: In the same skillet, add diced onion and sliced red bell pepper. Sauté for 3-4 minutes until the onion is translucent and the bell pepper is tender. Add minced garlic and cook for an additional minute until fragrant.

Make the Sauce: Pour in the chicken broth and let it simmer for 2-3 minutes to reduce slightly. Lower the heat and stir in the heavy cream, bringing it to a gentle simmer.

Add Cheese: Gradually whisk in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper if needed.

Combine: Add the cooked chicken and pasta to the skillet. Toss everything together gently to coat the pasta in the creamy sauce.

Garnish and Serve: Remove from heat, garnish with fresh parsley, and serve hot. Enjoy your delicious, creamy Cajun chicken pasta!
