Ingredients

1 lb ground beef (80/20 for optimal juiciness)

1 medium onion, thinly sliced

4 slices of Swiss cheese

4 slices of rye bread (or sourdough for a twist)

4 tablespoons unsalted butter, softened

1 tablespoon Worcestershire sauce

Salt and pepper, to taste

Optional: dill pickles and mustard for serving

Instructions

Prepare the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and a pinch of salt. Cook for about 15-20 minutes, stirring occasionally, until the onions are caramelized and golden brown. Remove from the skillet and set aside.

Form the Patties: In a bowl, combine the ground beef, Worcestershire sauce, salt, and pepper. Mix gently until just combined, then form the mixture into two equally sized patties.

Cook the Patties: In the same skillet used for the onions, add a little more butter if needed and increase the heat to medium-high. Cook the patties for about 4-5 minutes on each side, or until they reach your desired level of doneness (medium-rare is around 135°F).

Assemble the Patty Melts: Once the patties are cooked, layer each patty with two slices of Swiss cheese. Top with the caramelized onions.

Grill the Sandwiches: Preheat a separate griddle or skillet over medium heat. Spread softened butter on one side of each slice of rye bread. Assemble the sandwiches by placing the patty and onion stack between two slices of bread, buttered side out. Grill each sandwich for about 4-5 minutes per side, or until the bread is golden brown and the cheese is melted.

Serve: Remove the sandwiches from the heat and let them rest for a minute. Slice in half and serve with dill pickles and mustard on the side, if desired.
