Ingredients

6 cups day-old bread, cut into cubes (French baguette or brioche work well)

4 large eggs

1 cup milk (or almond milk)

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 cup melted butter (plus extra for greasing the muffin tin)

1 cup powdered sugar (for dusting)

Extra cinnamon sugar for sprinkling (1/4 cup sugar mixed with 1 tablespoon cinnamon)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with melted butter or cooking spray.

Prepare the Bread: In a large mixing bowl, place the bread cubes and set aside.

Mix the Wet Ingredients: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and nutmeg until well combined.

Combine: Pour the egg mixture over the bread cubes, gently folding until all bread is evenly coated. Allow this mixture to sit for about 10 minutes so the bread can soak up the liquid, stirring occasionally.

Fill Muffin Tin: Using a spoon or small ice cream scoop, fill each muffin cup with the soaked bread mixture, packing it down lightly. Don't overfill; leave a little room at the top.

Add Butter: Drizzle the melted butter over the top of each muffin.

Sprinkle: Generously sprinkle the cinnamon sugar mixture over the muffins.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and set in the center. A toothpick inserted should come out clean.

Cool and Dust: Allow muffins to cool in the pan for a few minutes before removing them. Once out, dust them with powdered sugar for an extra sweet touch.

Serve: Enjoy warm or at room temperature, and savor the delightful blend of flavors!
