Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1/2 cup carrot, sliced diagonally

1/4 cup onion, sliced

2 cloves garlic, minced

1-inch piece ginger, minced

1/4 cup soy sauce

2 tbsp oyster sauce

1 tbsp cornstarch

1/4 cup beef broth (or water)

1 tbsp sesame oil

1 tbsp vegetable oil

Salt and pepper to taste

Cooked rice or noodles, for serving

Sesame seeds and green onions, for garnish

Instructions
 

Marinate the Beef: In a bowl, combine the sliced beef with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and a pinch of black pepper. Let it marinate for at least 15 minutes.

    Prepare the Sauce: In another bowl, mix the remaining soy sauce, oyster sauce, beef broth, and sesame oil. Set this sauce mixture aside.

      Blanch the Broccoli: Bring a pot of water to a boil and add the broccoli florets. Blanch for about 3 minutes until bright green and slightly tender. Drain and immediately transfer to an ice bath to stop cooking. Drain again and set aside.

        Heat the Wok: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Sear without moving for about 2-3 minutes, then stir-fry until browned. Remove the beef from the wok and set aside.

          Sauté the Aromatics: In the same wok, add a bit more oil if needed. Add minced garlic and ginger, sauté for about 30 seconds until fragrant. Then, add the sliced onion and carrot, cooking for another 2-3 minutes until the vegetables are slightly softened.

            Combine and Stir-Fry: Return the beef to the wok along with the blanched broccoli. Pour the sauce mixture over the top and stir well to coat all the ingredients. Cook for an additional 2-3 minutes, making sure everything is heated through.

              Serve and Garnish: Remove from heat and serve hot over cooked rice or noodles. Garnish with sesame seeds and chopped green onions.
