Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

3 cups broccoli florets

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce (low sodium)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 tablespoon sesame oil

1 teaspoon sugar

Freshly ground black pepper, to taste

Cooked jasmine rice (for serving)

Optional: sesame seeds and sliced green onions for garnish

Marinate the Beef: In a medium bowl, combine the sliced flank steak, soy sauce, oyster sauce, cornstarch, and black pepper. Mix well to coat the beef evenly. Allow it to marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

    Blanch Broccoli: While the beef marinates, bring a pot of salted water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until vibrant green and slightly tender. Drain and immediately transfer to an ice bath to stop the cooking. Once cooled, drain again and set aside.

      Stir-fry the Beef: Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil. Once hot, add the marinated beef in a single layer (work in batches if necessary), and cook for about 2-3 minutes on each side until browned. Remove the beef from the pan and set aside.

        Cook Aromatics: In the same skillet, add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant but not burnt.

          Combine & Stir-fry: Return the beef to the pan along with the blanched broccoli. In a small bowl, mix together the sesame oil, sugar, and a tablespoon of water, then pour this mixture over the beef and broccoli. Toss everything together, ensuring the broccoli is well-coated and all ingredients are heated through, about another 2-3 minutes.

            Serve: Serve immediately over bowls of freshly cooked jasmine rice. Optionally, sprinkle with sesame seeds and sliced green onions for an extra touch.
