When it comes to stir fry, boneless, skinless chicken breasts are a top choice for several reasons. First, they are lean and packed with protein, making them a healthy addition to any meal. Their mild flavor allows them to absorb the zesty sauces and seasonings used in this recipe, enhancing the overall taste of the dish. Additionally, chicken breasts cook quickly, which is essential for achieving that perfect stir fry texture—juicy and tender without being overcooked.

Ingredients

2 boneless, skinless chicken breasts, sliced thinly

2 packs of instant ramen noodles (discard seasoning packets)

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 green onions, chopped

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Sesame seeds for garnish

Instructions

Cook the Ramen: Boil water in a large pot. Add the ramen noodles and cook for about 3 minutes or until al dente. Drain and set aside.

Sauté Chicken: In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

Add Aromatics: In the same skillet, add minced garlic and grated ginger, stirring quickly for about 30 seconds until fragrant.

Veggies Time: Add the sliced red bell pepper, broccoli florets, and snap peas to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.

Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked ramen noodles, soy sauce, oyster sauce, sesame oil, and red pepper flakes. Toss everything together until well combined and heated through, about 2-3 minutes.

Garnish and Serve: Remove the pan from heat. Top with chopped green onions and sprinkle sesame seeds to finish. Serve immediately.
