Chicken and Sweet Potato Bowls for Two

2 boneless, skinless chicken breasts

2 medium sweet potatoes, diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and pepper to taste

2 cups baby spinach

½ cup cherry tomatoes, halved

1 avocado, sliced

¼ cup feta cheese, crumbled

Fresh cilantro for garnish (optional)

Juice of 1 lime

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with 1/2 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper until evenly coated. Spread them out on a baking sheet in a single layer.

      Roast: Place the sweet potatoes in the preheated oven and roast for about 25 minutes, or until tender and slightly caramelized, tossing halfway through for even cooking.

        Cook the Chicken: While the sweet potatoes are roasting, season the chicken breasts with salt, pepper, and a sprinkle of smoked paprika. In a skillet over medium-high heat, add the remaining 1/2 tablespoon of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side or until they are golden brown and cooked through (the internal temperature should reach 165°F/75°C). Remove from the skillet and let rest for 5 minutes before slicing.

          Assemble the Bowls: In two bowls, divide the baby spinach as the base. Top each bowl with roasted sweet potatoes, sliced chicken, halved cherry tomatoes, and avocado slices. Sprinkle feta cheese on top.

            Finishing Touches: Drizzle fresh lime juice over each bowl and garnish with cilantro if desired.
