Ingredients

1 can (400g) baked beans, drained

1 cup shredded cheddar cheese (or your favorite cheese)

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger paste

1 green chili, chopped (adjust for spice preference)

1 teaspoon garam masala

1/2 teaspoon ground cumin

1/2 teaspoon turmeric powder

Salt and pepper to taste

4 slices of whole-grain or sourdough bread

Fresh coriander leaves, chopped for garnish

Optional: a drizzle of hot sauce for serving

Instructions

Prepare the Beans: In a medium saucepan over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until translucent (about 5 minutes).

Add Aromatics: Stir in the minced garlic, ginger paste, and chopped green chili. Sauté for another 2 minutes until fragrant.

Spice it Up: Add the garam masala, cumin, turmeric, and a pinch of salt and pepper. Mix well, cooking for another minute to toast the spices.

Mix in Beans: Pour in the drained baked beans, stirring to combine. Let simmer for about 5 minutes, allowing the flavors to meld. Adjust salt and pepper to taste.

Cheesy Bliss: Stir in half of the shredded cheddar cheese until melted and combined into the beans. Remove from heat.

Toast the Bread: While the beans are simmering, toast the bread slices to your desired crispiness.

Assemble: Place the toasted bread on serving plates and generously top each slice with the cheesy masala bean mixture.

Final Touch: Sprinkle the remaining cheddar cheese on top of each toast. If desired, place under the broiler for a couple of minutes to melt the cheese further.

Garnish and Serve: Remove from the broiler, garnish with fresh chopped coriander, and drizzle with hot sauce if using. Serve immediately.
