12 oz cheese tortellini (fresh or frozen)

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup red enchilada sauce

1 cup diced tomatoes (canned or fresh)

1 tsp ground cumin

1 tsp chili powder

½ tsp paprika

Salt and pepper to taste

1 ½ cups shredded Mexican blend cheese

¼ cup chopped fresh cilantro (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Cook Tortellini: In a large pot of boiling salted water, cook the tortellini according to package instructions until al dente. Drain and set aside.
