1 lb ground beef

1 tsp olive oil

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 cup beef broth

1 cup shredded cheddar cheese

4 large burrito-sized flour tortillas

1 can refried beans (15 oz)

1 cup salsa

1 medium-sized potato (for fries)

Salt and pepper, to taste

Optional toppings: sour cream, guacamole, jalapeños, fresh cilantro

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the potato, then cut it into thin strips to make fries.

        - Toss the potato strips in a bowl with olive oil, salt, and pepper.

          - Spread them out in a single layer on a baking sheet lined with parchment paper.

            - Bake for 20-25 minutes, flipping halfway through, until crispy and golden brown.

              Cook the Beef Filling:

                - In a skillet, heat a bit of olive oil over medium heat.

                  - Add the diced onion and sauté for 3-4 minutes until softened.

                    - Add the minced garlic and cook for an additional minute until fragrant.

                      - Add the ground beef to the skillet and cook until browned. Drain excess fat.

                        - Stir in the taco seasoning and beef broth; simmer for 5-7 minutes until the sauce thickens. Remove from heat.

                          Assemble the Burritos:

                            - Warm the flour tortillas in a skillet for about 30 seconds on each side or microwave them for a few seconds until pliable.

                              - Spread a layer of refried beans (about 2-3 tablespoons) on each tortilla.

                                - Spoon the beef mixture over the beans, then top with salsa and a generous handful of shredded cheddar cheese.

                                  - Fold in the sides of the tortilla and roll it tightly from one end to the other to form the burrito.
