Ingredients
  

2 cups diced potatoes (fresh or frozen)

6 strips of bacon, cooked and crumbled

1 cup shredded cheddar cheese

1 cup milk

4 large eggs

1/2 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the diced potatoes, crumbled bacon, half of the cheddar cheese, diced onion, garlic powder, paprika, salt, and pepper.

      In a separate bowl, whisk together the milk and eggs until well combined.

        Pour the egg mixture into the potato mixture and stir until everything is evenly combined.

          Grease a 9x13-inch baking dish with cooking spray or butter. Pour the combined mixture into the baking dish, spreading it evenly.

            Sprinkle the remaining cheddar cheese on top of the casserole.

              Bake in the preheated oven for about 45-50 minutes, or until the potatoes are tender and the top is golden brown.

                Once baked, remove from the oven and let it sit for about 5-10 minutes before serving. Garnish with fresh chopped parsley for added color and flavor.
