Ingredients
  

1 cup rolled oats

2 cups milk (dairy or plant-based)

1 medium carrot, grated

1/2 ripe banana, mashed

1/4 cup raisins

1/4 cup crushed walnuts (or pecans)

1 tsp ground cinnamon

1/4 tsp nutmeg

2 tbsp maple syrup (or honey)

1/2 tsp vanilla extract

A pinch of salt

Toppings: additional walnuts, coconut flakes, and a dollop of Greek yogurt (optional)

Instructions
 

In a medium saucepan, combine the rolled oats, milk, and a pinch of salt. Bring to a boil over medium heat.

    Once boiling, reduce the heat and stir in the grated carrot, mashed banana, raisins, cinnamon, nutmeg, and maple syrup.

      Cook the oatmeal for about 5-7 minutes, stirring occasionally, until the oats are creamy and cooked to your liking.

        Remove the saucepan from heat and stir in the vanilla extract and crushed walnuts.

          Serve the oatmeal hot in bowls. Top with additional walnuts, coconut flakes, and a dollop of Greek yogurt if desired.
