2 boneless, skinless chicken breasts

8 oz penne pasta

2 cups cherry tomatoes, halved

1 cup fresh mozzarella balls, halved

1/4 cup fresh basil, chopped

3 cloves garlic, minced

3 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove the chicken from the skillet and allow it to rest for 5 minutes before slicing it into strips.

      Make the Bruschetta Topping: In a large bowl, combine the halved cherry tomatoes, mozzarella balls, chopped basil, minced garlic, balsamic vinegar, and the remaining olive oil. Season the mixture with salt and pepper to taste. Gently toss everything together to combine.

        Combine Pasta and Chicken: In a large serving bowl, combine the cooked penne pasta with the sliced chicken. Add the bruschetta topping and toss everything together until well mixed.
