1 large head of broccoli, chopped into small florets

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

2 cups sharp cheddar cheese, shredded

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1 tablespoon cornstarch (optional, for thickening)

Fresh chives or parsley for garnish (optional)

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

    Add the minced garlic and sauté for an additional minute until fragrant.

      Stir in the chopped broccoli, salt, pepper, and paprika. Cook for 2-3 minutes, stirring occasionally.

        Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and let it cook for about 10-15 minutes, or until the broccoli is tender.

          Using an immersion blender, carefully puree the soup until it reaches your desired consistency (leave some chunks for texture if you prefer).

            Stir in the heavy cream and bring the soup back to a gentle simmer. Then, slowly add the shredded cheddar cheese, stirring until melted and smooth.

              If a thicker consistency is desired, mix 1 tablespoon of cornstarch with 2 tablespoons of water to form a slurry, and add it to the soup. Simmer for an additional 5 minutes until thickened.
