Black Pepper Chicken

Ingredients
  

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black peppercorns, coarsely crushed

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 tablespoon cornstarch

3 cloves garlic, minced

1 inch ginger, grated

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

3 tablespoons vegetable oil

1 tablespoon rice vinegar

Fresh cilantro for garnish

Salt to taste

Instructions
 

In a mixing bowl, combine the chicken pieces with soy sauce, oyster sauce, sesame oil, cornstarch, half of the crushed black pepper, and a pinch of salt. Mix well and marinate for at least 30 minutes.

    Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry for about 5-7 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

      In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic, grated ginger, and sliced onion for about 2 minutes until fragrant.

        Add the sliced red and green bell peppers to the skillet and stir-fry for an additional 3-4 minutes until they begin to soften.

          Return the cooked chicken to the skillet. Sprinkle in the remaining crushed black pepper and drizzle with rice vinegar. Stir everything together to combine well. Cook for another 2-3 minutes for flavors to meld.

            Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh cilantro before serving.
