3 ripe bananas, mashed

1 cup crushed pineapple, drained

1/2 cup shredded coconut, unsweetened

1/2 cup unsalted butter, melted

1 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chopped macadamia nuts (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the melted butter and brown sugar. Stir well until fully incorporated.

      Add the mashed bananas, crushed pineapple, eggs, and vanilla extract to the bowl. Mix until smooth and well combined.

        In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.

          Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix!

            Fold in the shredded coconut and chopped macadamia nuts, if using.

              Pour the batter into the prepared loaf pan and smooth the top with a spatula.

                Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
