For the Dumplings:

1/2 tsp salt

1/2 tsp turmeric powder

1/2 cup water (more if needed)

1 tbsp vegetable oil

For the Curry Soup:

2 cups vegetable broth

1 can (400 ml) coconut milk

2 tbsp red curry paste

2 garlic cloves, minced

1 tbsp ginger, minced

1 medium onion, diced

1 carrot, sliced

1 red bell pepper, diced

2 cups spinach

1 tbsp soy sauce

1 tbsp lime juice

Fresh cilantro for garnish

Salt and pepper to taste

Instructions

Make the Dumpling Dough: In a bowl, mix the all-purpose flour, salt, and turmeric. Gradually add the water and oil, kneading until you get a smooth dough. Cover and let it rest for 30 minutes.

Prepare the Curry Soup Base: In a large pot, heat a splash of oil over medium heat. Add minced garlic and ginger; sauté until fragrant (about 1 minute). Add the diced onion and cook until translucent.

Add Vegetables and Curry Paste: Stir in the sliced carrots and diced bell pepper. Cook for an additional 3-4 minutes. Then, add the red curry paste and cook for another minute.

Combine Broth and Coconut Milk: Pour in the vegetable broth and coconut milk. Bring the mixture to a gentle simmer, allowing the flavors to meld (about 10 minutes). Season with soy sauce, lime juice, salt, and pepper.

Shape and Cook Dumplings: On a floured surface, roll out the resting dough to about 1/8-inch thickness. Cut out circles using a cookie cutter or glass. Place a small amount of filling (optional: leftover cooked vegetables or minced meat) in the center of each circle, fold, and seal tightly to form dumplings.

Cook the Dumplings: Carefully add the dumplings to the simmering soup. Allow them to cook for 5-7 minutes, or until they float to the surface.

Final Touches: Stir in the spinach and allow it to wilt in the hot soup. Taste and adjust seasoning with more salt, pepper, or lime juice if desired.

Serve: Ladle the soup into bowls, garnish with fresh cilantro, and enjoy your delightful curry dumpling soup!
