Beef with Oyster Sauce

500g beef sirloin, thinly sliced

2 tablespoons oyster sauce

1 tablespoon soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon ginger, minced

1 tablespoon sesame oil

2 spring onions, chopped (for garnish)

Salt and pepper to taste

Cooked jasmine rice (for serving)

Instructions
 

In a mixing bowl, combine the beef slices with oyster sauce, soy sauce, and cornstarch. Mix thoroughly and let it marinate for about 20 minutes.

    Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes, or until browned. Remove the beef from the skillet and set aside.

      In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic and ginger until fragrant, about 30 seconds.

        Add the sliced onion and bell peppers to the skillet and stir-fry for 4-5 minutes until they are slightly tender but still crisp.

          Return the cooked beef to the skillet, pouring in any remaining marinade. Stir well to combine with the vegetables. Cook for an additional 2 minutes, allowing flavors to meld.

            Drizzle sesame oil over the dish. Season with salt and pepper to taste, and stir to combine.

              Remove from heat. Plate the beef stir-fry over a bed of jasmine rice and garnish with chopped spring onions.
