1 lb (450g) boneless, skinless chicken thighs

1/2 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 cup all-purpose flour

1/2 cup panko breadcrumbs

1/4 cup honey

1/4 cup mayonnaise

2 tbsp sriracha (more for extra heat if desired)

Fresh cilantro, chopped (for garnish)

Wooden skewers (soaked in water for 30 minutes)

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.

    Prepare the Breading: In one bowl, place the all-purpose flour. In another bowl, place the panko breadcrumbs. Take the marinated chicken out of the refrigerator, one piece at a time, allowing the excess buttermilk to drip off, and first coat it in flour, shaking off any excess. Then, roll it in the panko breadcrumbs, ensuring an even coating.

      Skewer the Chicken: Cut each breaded chicken thigh into strips or cubes, depending on your preference. Thread the chicken onto the soaked wooden skewers, about 4-5 pieces per skewer.

        Cook the Chicken: Preheat your grill, grill pan, or oven (400°F/200°C). Grill the skewers for about 5-7 minutes per side, or until the chicken is cooked through with an internal temperature of 165°F (75°C) and has a crispy exterior. Alternatively, you can bake them on a lined baking sheet for the same amount of time.

          Make the Bang Bang Sauce: In a small bowl, whisk together honey, mayonnaise, and sriracha until smooth and well combined. Taste and adjust the seasoning, adding more sriracha if desired for more heat.
