Bang Bang Chicken Bowls

For the Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

For the Chicken:

1 pound boneless, skinless chicken thighs (or breasts)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 tablespoon olive oil

For the Bowls:

2 cups cooked jasmine rice (or brown rice)

1 cucumber, thinly sliced

1 cup shredded purple cabbage

1 cup edamame (shelled)

2 green onions, chopped

Fresh cilantro, for garnish

Sesame seeds, for garnish

Prepare the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, and Sriracha. Whisk together until smooth and well-mixed. Adjust the spice level by adding more Sriracha if desired. Set aside.

    Cook the Chicken: In a coating bowl, combine garlic powder, onion powder, paprika, salt, and pepper. Pat the chicken dry with paper towels, then rub the spice mixture evenly on the chicken.

      Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken. Cook for about 6-7 minutes on each side, or until golden brown and fully cooked (internal temperature should reach 165°F / 74°C). Remove from heat and let rest for a few minutes.

        Slice the Chicken: Once the chicken has cooled slightly, slice it into strips or bite-sized pieces.

          Assemble the Bowls: Divide the cooked rice among serving bowls. Add sliced chicken on top. Arrange cucumber, shredded cabbage, and edamame around the chicken. Drizzle Bang Bang sauce generously over the top.

            Garnish and Serve: Top with chopped green onions, fresh cilantro, and sesame seeds. Serve extra Bang Bang sauce on the side for dipping, if desired.
