1 lb boneless, skinless chicken breast, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 tablespoon sesame oil

2 cups cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumber

1 avocado, sliced

3 green onions, sliced

1 tablespoon fresh cilantro, chopped

Salt and pepper to taste

Sesame seeds for garnish

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons Sriracha (adjust for spiciness)

1 tablespoon lime juice

Salt to taste

Prepare the sauce: In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, and a pinch of salt. Adjust seasoning and set aside.

    Coat the chicken: In a shallow bowl, season the chicken pieces with salt and pepper. Dredge each piece in cornstarch, then dip in the beaten eggs, and finally coat with panko breadcrumbs.
