For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon cornstarch

1 teaspoon garlic powder

1 teaspoon ginger powder

1 tablespoon olive oil

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey (optional)

For the Bowl:

1 cup cooked jasmine rice (or cauliflower rice for a healthier option)

1 cup shredded carrots

1 cup cucumber, thinly sliced

1 avocado, sliced

1/4 cup chopped green onions

1 tablespoon sesame seeds

Fresh cilantro for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the soy sauce, cornstarch, garlic powder, ginger powder, and olive oil. Add the chicken thighs and coat well. Cover and refrigerate for at least 30 minutes (or up to overnight for deeper flavor).

    Prepare the Bang Bang Sauce: In a separate bowl, mix together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using). Adjust the sriracha according to your spice preference. Set aside.

      Cook the Chicken: Heat a skillet over medium-high heat. Add a bit of oil and cook the marinated chicken thighs for about 5-6 minutes per side or until cooked through and golden brown. Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.

        Assemble the Bowls: In serving bowls, place a scoop of cooked jasmine rice (or cauliflower rice) at the bottom. Top with shredded carrots, cucumber slices, sliced avocado, and the cooked chicken.

          Drizzle with Sauce: Generously drizzle the Bang Bang sauce over the top of each bowl.
