Bang Bang Chicken Bowl

Ingredients
  

1 lb boneless, skinless chicken thighs

2 cups cooked jasmine rice

1 cup broccoli florets

1 cup snap peas

1/2 cup red bell pepper, sliced

1/4 cup green onions, chopped

1 tablespoon sesame oil

1 teaspoon garlic, minced

1 teaspoon ginger, minced

Salt and pepper to taste

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey

Instructions
 

Marinate the Chicken: In a bowl, mix the sesame oil, minced garlic, minced ginger, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Let it marinate for at least 30 minutes in the refrigerator.

    Prepare the Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, lime juice, and honey until smooth. Adjust the spiciness by adding more Sriracha if desired. Set aside.

      Cook the Chicken: Heat a skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Cook for about 5-6 minutes on each side, or until the chicken is cooked through and has a nice golden crust. Remove from heat and let it rest for a few minutes before slicing.

        Blanch the Vegetables: In a pot of boiling water, add the broccoli florets and snap peas. Blanch for about 2-3 minutes until tender-crisp, then drain and quickly rinse with cold water to stop the cooking process.

          Assemble the Bowl: In serving bowls, place a generous scoop of cooked jasmine rice at the bottom. Layer the sliced chicken on top, followed by the blanched vegetables and the sliced red bell pepper.

            Drizzle with Bang Bang Sauce: Pour your homemade Bang Bang sauce over the top of the bowl. Garnish with chopped green onions.
