Baked Feta Pasta

Ingredients
  

200g (7 oz) pasta (penne or fusilli works best)

200g (7 oz) block of feta cheese

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large baking dish, add the cherry tomatoes and minced garlic. Pour the olive oil over them and season with salt, black pepper, oregano, and red pepper flakes. Toss everything together.

      Make a well in the center of the arranged tomatoes and place the block of feta cheese there. Drizzle a little more olive oil on top of the feta and season with salt and pepper.

        Bake in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered and the feta is soft and slightly caramelized.

          While the feta and tomatoes bake, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.

            Once the feta and tomatoes are done baking, remove the dish from the oven and use a fork to mash the feta into a creamy sauce along with the blistered tomatoes. Mix well.

              Add the cooked pasta to the baking dish and toss to combine, adding a bit of the reserved pasta water as needed to help create a sauce.

                Taste and adjust seasoning if necessary. Serve immediately, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
