Ingredients

2 cups all-purpose flour

1/2 cup water (plus extra if needed)

1/2 lb ground pork (or chicken)

1 cup finely chopped green onions

1 tablespoon ginger, minced

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon chili paste (adjust to taste)

4 cups chicken broth

1 tablespoon soy sauce (for broth)

Salt and pepper to taste

Fresh cilantro for garnish

Sliced red chili for garnish

Instructions

Make the Dumpling Dough: In a mixing bowl, combine the all-purpose flour and water. Mix until the dough comes together. Knead for about 5 minutes until smooth. Cover with a damp towel and let it rest for 30 minutes.

Prepare the Dumpling Filling: In another bowl, mix the ground pork (or chicken), chopped green onions, ginger, garlic, soy sauce, sesame oil, chili paste, salt, and pepper. Ensure everything is well incorporated.

Form the Dumplings: Roll the rested dough into a long log, cut into small pieces (about 1-inch each). Flatten each piece into a circle, about 3 inches in diameter. Place about 1 teaspoon of filling in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges well by pinching them together.

Prepare the Soup Base: In a large pot, bring the chicken broth to a gentle simmer. Add 1 tablespoon of soy sauce, and adjust seasoning with salt and pepper.

Cook the Dumplings: Carefully add the dumplings to the simmering broth. Let them cook for about 5-7 minutes or until they float to the top and are cooked through.

Serve: Ladle the soup into bowls, ensuring to include dumplings. Garnish with fresh cilantro and sliced red chili for added heat and flavor.

Enjoy your Authentic Spicy Dumpling Soup! Serve hot and enjoy the comforting warmth of a delicious bowl of homemade dumpling soup!
