Apple Fritter Bites

2 large apples (preferably Granny Smith or Honeycrisp), peeled, cored, and chopped

1 cup all-purpose flour

1/4 cup granulated sugar

1/4 cup brown sugar, packed

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1 large egg

1/2 cup whole milk

1 teaspoon vanilla extract

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Prep the Apples: In a bowl, toss the chopped apples with a tablespoon of granulated sugar and a sprinkle of cinnamon. Let sit for about 10 minutes to soften and release some juices.

    Make the Batter: In a separate mixing bowl, combine the flour, both sugars, baking powder, cinnamon, nutmeg, and salt. Stir well to combine.

      Combine Wet Ingredients: In another bowl, whisk the egg with the milk and vanilla extract until smooth.

        Mix Everything Together: Add the wet mixture to the dry ingredients and stir until just combined. Fold in the prepared apple mixture gently until evenly distributed.

          Heat the Oil: In a deep skillet or pot, heat oil over medium heat until it reaches about 350°F (175°C). You can test if the oil is hot enough by dropping in a small spoonful of batter; it should sizzle and rise to the surface.

            Fry the Bites: Using a tablespoon, drop small spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

              Prepare the Glaze: In a small bowl, whisk together the powdered sugar and 2 tablespoons of milk until smooth. Adjust the consistency to your liking; add more milk for a thinner glaze or more powdered sugar for a thicker one.
