8 oz (225 g) spaghetti or your favorite pasta

2 cups fresh spinach, roughly chopped

1 lemon (zested and juiced)

3 cloves garlic, minced

1/4 cup extra virgin olive oil

1/4 cup grated Parmesan cheese (plus extra for serving)

Salt and black pepper to taste

1/4 tsp red pepper flakes (optional)

1/4 cup toasted pine nuts (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Sauce: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Spinach: Add the chopped spinach to the pot and sauté until wilted, about 2–3 minutes.

        Combine Ingredients: Return the drained pasta to the pot with the garlic and spinach. Pour in the lemon juice and zest, and add the grated Parmesan cheese. If the mixture seems dry, gradually add some reserved pasta water until you reach your desired consistency.
