300g fresh udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 garlic cloves, minced

1 teaspoon ginger, minced

1 spring onion, chopped (for garnish)

1 teaspoon sesame seeds (for garnish)

Optional: fresh cilantro or parsley (for garnish)

Instructions
 

Boil the Noodles: In a large pot of boiling salted water, cook the udon noodles according to package instructions, usually about 2-3 minutes for fresh noodles. Stir occasionally to prevent sticking.
